Organic fregola from biogan comes from Sardinia and is a traditional "the Sardinian Pasta" also called Pearl couscous.
Fregola is made from semolina and produced in bronze molds, which gives it a more porous surface.
The porous surface means that a sauce or marinade sticks better and you get a better taste experience.
Fregola is cooked for about 10 minutes in a ratio of 1 part fregola to 4 parts water, with salt added.
Fregola is good in salads, and here it is of course important that you add the fregola to the salad cold, i.e. that you pour cold water over them immediately after they have finished cooking, so that they cool down quickly.
If they are to be used in a hot dish, it is a good idea to add a little olive oil after you have poured off the boiling water, so that it does not stick.
Fregola can also be used for risotto-like dishes and minestrone.
