Kale and research
The research project MAXVEG took place in the period 2010-2015 with Per Bendix Jeppesen as project manager.
The aim was to investigate the effect of a high daily intake of strong and bitter vegetables on people with type 2 diabetes and/or metabolic syndrome, and compare with a high daily intake of mild and sweet vegetables on the same population group. A normal Nordic diet is used as a control.
The three different diet types are held up against each other in relation to insulin sensitivity, blood sugar, blood pressure, weight, body fat percentage, fat and metabolism profile, vitamin status, immune system activity and the body's general overall condition.
The test participants, who all had type 2 diabetes, eat 500 grams of coarse vegetables - every day!
It turned out to have several positive effects.

 

Strong and bitter vegetables are, for example, kale.
Kale contains the good polyunsaturated fatty acids, has a very high fiber content and a high protein content.
Cabbage contains several of the essential amino acids that we do not produce ourselves, and it is also full of vitamins and minerals, such as vitamin C and K, which many Danes typically get too little of.

Not only did the participants lose weight, they also significantly changed their diabetes profile, thus reducing their risk of developing cardiovascular diseases
Their insulin sensitivity was significantly improved, which means they can better control their diabetes.
The researchers could measure the greatest effect in the test participants who ate bitter vegetables, which led the researchers to conclude that the sharper/stronger and bitter a taste vegetables have, the healthier they are.

Per Bendix Jeppesen has worked on this knowledge in a study.
But this time he has made it a little easier for the trial participants

He has used kale in powder form KaLOHAS - which was developed by a company from Randers "Green Gourmet"

 

Per Bendix Jeppesen describes that cabbage has positive effects on both weight loss and glucose regulation and is therefore suitable for diabetic patients and the obese.

In the new trial, a group of patients with type 2 diabetes ate a bar filled with kale powder, cocoa and coconut before each main meal for three months.
While a control group ate bars without kale powder.
Both bars were very low in calories.

The group that received the kale powder received 34 grams of powder per day (=3-4 bars/day), which corresponds to 430 grams of fresh kale if you convert it.

The results were that after three months you could see that the diabetic patients' long-term blood sugar was significantly decreasing.
Their diabetes was better regulated and the general blood sugar levels lower.
There was also a clear difference in the participants' cholesterol levels.

The researchers also saw a difference in weight: The powder gives a great feeling of satiety; as it helps absorb fluid into the intestines.
The participants kept diet diaries and here it appeared that they actually ate much less, so there was significant weight loss in the group that received kale.

Finally, the researchers also measured the body fat mass of the participants and saw a reduction in fat mass in the group that received kale.

 

INSPIRATION

Make a healthy, refreshing slushie for the coming lovely warm spring days - with 2-3 ingredients
Ingredients:
2 cups cold water (or your preferred beverage)
2 portions (tablespoons) organic KaLOHAS® freeze-dried kale powder
1 tablespoon honey / alternatively lemon/mint
Course of action:
1. Pour the cold liquid into the blender
2. Mix well
3. Pour mixture into ice tray and freeze until semi-frozen (so you get slush consistency)
4. Blend until the desired consistency is reached.

 

Kale frittata
Ingredients:
100 grams of diced smoked bacon
1 tbsp. Butter
3 eggs
0.5 dl milk
10 grams of kale powder
Preparation:
Fry the bacon cubes on a pan
Grease the ovenproof dish with the butter while the oven is heating up
Whisk eggs, milk and kale powder together
Pour the ingredients into the dish and bake it in the oven at 225 degrees for 30 minutes


Apple tzaziki
Ingredients:
2.5 dl Greek yogurt
Coarsely grate 2 apples
1.5 cloves of garlic (1 large clove)
Kale powder (2.5 grams)
Salt
Preparation:
Ingredients are stirred together in a bowl
