Cooking instructions: Boil the rice in a ratio of 1 part to 2 parts water and cook for 35 minutes. After that, let it rest for approx. 10 minutes.

A tasty salad with beans, red rice and vegetables
Ingredients:
2 dl red rice
100 g cooked kidney beans (remember to soak)
1 red bell pepper
150 g cherry tomatoes, cut in half
4-6 spring onions
50 g kalamata olives
75 g cashew nuts
100 g feta
Sea salt
Freshly ground pepper
Dressing
1 tbsp mustard
2 tbsp balsamic vinegar
5 tbsp olive oil
Lemon juice
How to:
Start by cooking the rice according to the instructions on the bag, let them cool
Mix the mustard and balsamic dressing, then mix in the oil. Season with lemon
Mix the beans, red pepper, sautéed spring onions, halved olives and the red rice
Carefully fold in the halved cherry tomatoes
Pour the dressing over the salad and let it sit for a whileRoast the cashews in a pan, then fold them into the salad together with the feta.
Season with salt and pepper.
