Then you use the chocolate - tempering:
Melt 2/3 of the chocolate in either a microwave or a water bath to 50 °C
Chop the last 1/3 into small pieces and stir together with the melted 2/3 until the temperature is brought down to a working temperature of approx. 32°C
This temperature can be maintained by gently heating the chocolate
Peru's extremely hot and humid climate is ideal for growing cocoa of the absolute finest quality, and the Peruvians are therefore naturally also among the world's elite when it comes to cultivation.
The Peruvian cocoa farmers have joined together in cooperatives around the organic and sustainable cultivation of cocoa. The farmers here have specialized in their field and continue to further their education in plant breeding, fermentation, drying and quality control. Supplier agreements ensure the cooperatives good working conditions and fair prices, as well as programs with compulsory schooling for children and projects that support women. The organic Chuncho cocoa beans used to produce this chocolate originate from the Cusco region, which was the center of the Inca Empire. The Peruvians cross-graft cacao plants to refine the taste and for the cacao plant to obtain better defenses against disease. Chuncho is a variety of Trinitario cocoa beans. The exclusive cocoa variety combined with the local expertise in fermentation results in an incredibly well-composed chocolate with a fruity undertone.
