Organic potato flour from biogan is not flour in the true sense of the word, as potato flour is actually a potato starch made from potatoes.
Potato flour does not contain gluten and is typically used in roulades, layer cake bases, and for smoothing e.g. fruit porridge, juice, etc.
It can also be used in minced meat and minced fish because potato flour can increase the water binding capacity.
For smoothing, it is advantageous to mix potato flour with cold water.
Smoothing with potato flour must not boil, so if you use potato flour in hot dishes, it is important that you remove the dish from the heat before adding the potato flour, while stirring.
Organic gluten-free potato flour means that the gluten content does not exceed 20 mg per kg.
